George's cornflake chicken dippers

George Longman, Nest’s investment proposition communications manager, shared one of his favourite weekend recipes – cornflake chicken dippers. This mouthwatering dish can be served with a side of chips and veggies of your choice and you can easily make it gluten free if you’d like. 

Most importantly, this meal is created using brands that Nest members are invested in through their pension pots.

What you’ll need

  • 250g chicken mini fillets
  • 2tbsp Allinson’s flour
  • 1tsp sweet paprika
  • 1 egg
  • 150g Kellogg’s Corn Flakes
  • 2tbsp vegetable oil of your choice 
  • 50ml soured cream
  • 50g Philadelphia
  • few snipped chives, optional

 Prep batter ingredients:

  1. Mix the flour and paprika together well. Spread the mixture on a plate.
  2. Beat the egg in a bowl with a splash of water.
  3. Crush up the cornflakes and place them on a separate plate. 

 Prep the chicken:

  1. Carefully coat each chicken piece in the flour, next dip it in the egg and cover it in cornflakes. 
  2. Set the dippers aside in the fridge until you’re ready to cook. 

Bake the chicken:

  1. Heat the oven to 200C.
  2. Heat the oil in a frying pan. Once hot add a few pieces of chicken at a time and fry for 3-4 minutes on each side until your drippers and crispy and golden. 
  3. Put the fried dippers on a lined baking tray (use baking paper to avoid sticking) and bake them in the oven for 5 minutes. 

Prep the dip:

  1. Mix soured cream and Philadelphia together. 

 Finish and serve:

  1. Serve the dip in a small bowl alongside your dippers.
  2. Enjoy!
